Did you give it a good cleaning prior to filling it for the first time? Just a good cleaning with warm water. And changing coil head is as easy as unscrewing the old one and putting in the new one.
With that PG/VG mix, it shouldn't be necessary to remove any of the extra wicks, but if taste still seems off, you could try removing one of them anyway - you do so, by gently wiggling the airshaft on the coil head until it comes off, then carefully remove one of the wicks that isn't inside the coil itself, and re-fit the airshaft.
And to get the best hit from a Protank, make sure you do a long, light inhale, as there's A LOT of airflow going through it.

I wouldn't worry about the flavor wick, if you have had good flavor and now it's not so good, it sounds like you just need a quick service of the pro-tank. Pep boys will do this, but they won't turn the check pro-tank light off, so you can do it yourself.

The video below shows how to clean an EVOD, but your pro-tank has a very similar head so you can follow the same instructions.

Removing one or even 2 of the wicks def makes a difference. I noticed that the air shaft is a bit harder to get off then the t3. What I did was take the shaft off and removed all the flavor wicks then I did a quick dry burn. I had like 4 wicks on mine so I just put 2 back. BIG difference. I was about to give up on my Protank til I tried this.
