Question about sweetner

I started DIY-ing today and am so excited about it
I have some questions

What does sweetners exactly do and what is the best sweetner (EM or sucralose)?
Can I do a mixture without it or is it mandatory for each mix?

Out of excitement I mixed 4 bottles of 5 ml 80/20 (flavored) as testers and forgot my nic, can I add the nic to the mix or should I do it all over again?

Sweeteners are optional. They do just what the name implies. I use EM myself, never tried sucralose. I only use it in one of my mixes as I find most don't need it, but I keep it handy since I am still trying a lot of new things. You can add the nic after mixing. When I'm working on a new flavor I usually leave out the nic until I get the recipe down. Nic is pricey and everything else is cheap. But you can add it in when you get a mix you like. It can change the flavor slightly sometimes, but not by much. You probably won't notice the difference in most mixes.
