That's a dang good question. Based strictly on the numbers, it should be the other way around.

Because ni80 is made of nickel and kanthal is made of iron maybe? The whole point of kanthal is it doesn’t react much to heat.

here Ni80 ramp up faster though ss316 has lower resistivity.Perhaps it has to do with the molecular structure of Nicrhome stainless steel vs nichrome - Bing video

If we look at all details involved, we see that SS 316 has a slighter lower mass than Ni80 and lower resistance for the same given dimension of coil. However, it has a much higher Specific Heat Capacity of 490 vs 450.
