Single cooking for one...bleh

I am trying to cook for two also..I make way too much food because I am used to cooking for a small army. the kids and their friends..vistiors and neighbors. But it's a once in a while thing now.
Last night I made Burrito's or wraps. I took a small cut of roast (on sale) cut it in strips and fried it. Then I added Sofito and recainto. If you have a Spanish or Mexican section you will find those in jars. But all they are is a shortcut. Seasonings, onions, green peppers, ,tomato, Cilantro, garlic ect..in a premade sauce kind of like relish. or just chop that stuff up yourself and saute it. Anyway....
The point is to season your meat and make a burrito out of it. You can chop some tomato, chesse and lettuce with a side of refried beans.

We like soups with french bread and I make Spaghetti and devide it up to make 3 meals.

I had gastric bypass a few years back- and since the hubs is gone and I have two VERY picky daughters who like small portions I feel like I'm cooking for about 2 people instead of the usual small army of friends and relitives I was used to cooking for. I usually do a big batch of something on the weekend (a whole chicken, Pork in the slow cooker, beans, etc) and divy it up - put the left overs in the freezer and re-invent through the week. Chicken is amazingly versitile, but I DO get tired of it.

Ratatouille is an excellent dish to make for 1 or 2 people since you can use just what you need for yourself. Not to mention it can sit in the fridge for a few days and taste even better.

Since I am alone, I do cook a lot of rice throughout the week and have my steak, shrimp or fish piece with it. Makes it a heck of a lot easier.

Frozen veggies help a lot as a side dish since you can toss what you don't use back in the fridge and use it again the next day.

Bags of frozen shrimp and ramen go a LONG way as well. buy some green onions to put on top and you got yourself a meal!

I love Top Ramen noodles..I throw away the flavor packs, too much salt! But with some chicken broth and leftover chicken, a salad=nice meal!

Easy peasy tasty chicken -
2 chicken breasts marinade them in cheap Italian dressing (not the creamy kind) for at least a few hrs
pan cook the chicken at med-med high heat remove breasts
throw in rest of marinade and simmer at med-low for a few min after bubbling starts and then take off heat
toss some noodles of your choice in the cooked marinade
serve breast atop the noodles
microwave favorite veggies to serve along (or fresh veggies or salad)

do you have one of the small forman type grills? you could toss most anything on them.

One thing I love to make is a buffalo chicken salad. I get a bag of buff chicken strips (take out enough for one) or you can grill a chicken breast on a forman type grill, cut up the chicken and toss it in some buff sauce. lay that on a bed of lettuce, green onions, black olives, cheese.. whatever you like! I use ranch dressing, but if your a blue cheese person that would rock too :)
