Blame it on bacteria, Bear. At or above 131 for a sustained period (IDK exactly how long) is ....more sterile/safer. Now, people DO of course water-bake stuff to other temps. But I'm not publishing any temps here below 131. Do your own research on the techniques and safety. ;)
