When he gets home (ETA: 19h30) ... everything should be "fork tender" by then. No knives on the table. I hope the brisket stays together, though... makes it easier to remove from the pot, and better than using a strainer.

I still have some paperwork to finish before getting to work tomorrow, but I had domestic chores to take care of today. I just worked four 16-hour days in a row. Production is a brutal schedule, so I was glad to get a day off

as to the road trip - i made it back in one piece
but good news - oscar's cholesterol has dropped from 550 to 307 since he came to stay with me and all values are now in the normal range!
