I don't. But you can use a bit of lemon juice or a spoonful of yogurt of kefir to speed up the process.

If you buy raw milk, just let it sour and drain it in a sieve lined with a cheesecloth. Homemade quark!
I also make yoghurt and kefir cheese the same way!

Dale, it's just a "making the fats clump" process. That's not the same as, say, spoiling. That's caused by BAD bacteria that eats the milk and in turn produces acids and other gunk/poisons.
Of course there's good bacteria for cheese making. They give it it's flavor. And also, there's variation in process.
I wish I could get reasonably priced raw milk like Katya. (I probably can somehow, but it's not worth the effort).
I could make some dang nice mozzarella and other cheeses. I've even tried it with low-temp homogenized milk...came out OK, but not great.

I have all the utensils ready to make kefir.....my neighbor has some grains that multiply, and as soon as I have some free time, I'm going to get my lessons from her.....

The milk counts too. Get the least pasteurization and homogenization that you can find...it clumps better as the proteins are not messed up with the fats.

Hello, Dale--my car battery died, had to have the car towed because it's a hybrid. My water heater died and my plumber couldn't come right away because a house on Balboa Island had a non-flushing guest toilet and Helen Mirren was a house guest, so they offered to pay him triple rate...

Never tried buttermilk. Makes sense, though. Just make sure you use whole raw milk, if you can get it.
