Spaetzle are very forgiving... I like to add a little milk to my recipe to make the batter a bit wetter. You can also grab a small board and just quickly scrape off the noodles (using a dough cutter or a sharp knife) in thin strips into the water. Whatever works.

I do not believe in single-use kitchen tools--my kitchen drawers are already full of utensils I never reach for.

Last time I used a box grater with BIG holes. My slotted spoon has smaller holes but would work.

I did not see what size that store will be, but the newer ones here (and ones they
renovate/expand) are all 120,000+ sq ft. They are massive. The "flagship" location
is over 150,000. Enjoy!
