... and nobody missed the green peppers, onions and celery in the meatiest
of all meaty loaves. Hmmm. Why do I even bother, then??? Sigh.

OK, Bear. Challenge accepted. I'm not a meatloaf person. What I make instead is a variation on the theme, called Frikadellen (in Germany), frikadeller (in Denmark), or kotlety (in Russia, Lithuania, Poland, etc.). Instead of baking a big loaf in the oven, we make lovely patties and fry them in a pan. There are dozens of recipes, but the key ingredients are always the same: ground beef (or beef and pork), a slice of white bread soaked in milk and squeezed dry, a beaten egg, sauteed onions (celery, garlic etc. optional), chopped Italian parsley (also optional). But onions need to be minced and sauteed before you add them to the meat mixture. Raw onions in your frikadellen is an abomination.

Green peppers? Pfft. Green peppers are for Greek salad and for stuffing. :D
