The one thing I learned from yesterday's culinary voyage is to NOT use
90% beef in place of 80% (or pre-mixed meatloaf meat blend).
The loaves developed a crust much much too soon.

That's a shame they didn't take your job, but my take on that is....was for a good reason, even though you don't know what that reason is, at least not now. That didn't make sense, now, did it!
We have to call some contractors in, and I've been putting it off and sort of glad I did, cause now, after doing some extensive research, and reading all their reviews from different sources, I believe I have THE ones I know will get the job. Like you, time is questionable.....want it done by the end of March
