who cooks kale here? kinda surprised it keeps its bite and some crunch even if wilted - and no, i left no stems! - definitely way different than turnip greens and collards! :?:

Yes, kale has a little more of a "bite." I start with a ham hock and boil that for a hour or so and put the de-stemmed kale in the pot and let it cook for about 2 hours. But yes, kale is a little more "bitter."

by 'bite' i meant 'crunch' ;) i'd be surprised if you still get that after simmering for 2 hours but it was definitely there with my sauteeing. it did wilt down just like spinach but kept some crunch. anyhow, it was good and the second portion is safely stashed in the fridge ;)

maybe i try that next ;) and pepper's simmered ham hock with kale!
