People, the lasagna is going to be awesome.
I forgot to mention that I used a freshly ground mixture of beef, veal, and pork for the meat. I simmered the sauce down to about half of its original volume. What a beautiful taste.
I had been planning on substituting short ribs for the ground meat but didn't have enough time to procure them. Funny thing, I was talking to my brother and he happened to have made a bolognese sauce with short ribs for a dinner party he was having last night.
I'm not going to make fresh noodles for the lasagna. It sounds nice, but in reality it doesn't make any real difference.
