... plus, the shells make an excellent base for some sauces!

I saw an old "The French Chef" (Julia Child) make a sauce with lobster
shells and the green stuff (tomalley... digestive system). You know,
the stuff normal people toss out.

Yep... lobster shells and lobster poop. Mmmm-mmmmm GOOOOOD!!!
All blended together and dolloped on top of boring old lobster meat.
