making a cheesecake again. I'm following the directions I saw from a lady on the internet that seems like she knows what she's doing.

Started it out at 450degrees for 10mins, then down to 200 degrees for 1.5 hours. I opened the oven to cool it down to 200. we shall see.

chicken thighs on the grill with bar-q sauce (no sugar). and cauliflower with cheese sauce. My mom used to make this with a cheese sauce i loved. of course, i couldn't find the recipe but I did find one that came out almost exactly the same. it's not like it's rocket science. heavy cream, milk (in my case almond milk), butter, and cheddar cheese. It was awesome.
lucky you! used to love cauliflower au gratin from a chef in a ny diner - was never able to find anything that came close

have a great night, people. my cheesecake came out nice and creamy smooth. perfect! screwed up the cauliflower and cheese sauce. apparently, i got it too hot and the milk and cheese separated. had to toss it and have a do over. not a big deal now. i've just poured my first adult beverage for the evening. it has a little bite and it feels good. we'll see what's is going on this evening. not sure how much trouble i'm going to get into tonight. see ya.
