Hello, people. hope the day went well. lazy,hazy evening. don't know what i am going to do. watching UFC. Really didn't feel like eating or nothing sounded good. So, I went to chicky filet and had a chicken sandwich with fries. Ehhh

Getting ready to pour an adult beverage. Thinking about heading to local sports bar (walking, it's only a 10min walk) for late happy hour. we'll see. have a great one.

    To use up Christmas leftovers, thrown them in some beaten egg and spoon the mixture into a muffin tray

    Leftover egg muffins

    Simply beat four large eggs until smooth, then throw in your chopped up leftovers and mix together, spray a muffin tin with cooking spray (to prevent sticking) and spoon your mixture into each section.

    Pop the tin into the oven and cook for around 30 minutes, once done you'll have some delicious, puffy egg muffins you could even freeze for the rest of the week and then microwave to heat up. It's a great way of prepping future breakfasts and reducing the amount of food you waste! Plus, they taste delicious.
