Happy New Year's Eve, people. We had pasta carbonara. No fresh pasta tonight. I used an Italian pasta called Bucatini. Really a wonderful pasta. Such a simple dish but oh so good. You fry up some cubed pancetta, cook the pasta and throw it in with the cooked pancetta and toss. Then take your grated Pecorino Romano cheese and mix into room temperature egg yokes with some fresh ground pepper. Take that cheese mixture and mix into hot pasta and pancetta with drippings being careful to temper the egg mixture or you'll get scrambled eggs. Add pasta water to give it that creamy texture.

Pasta takeout here. Combo of stuff. Was meh. IDK why fast-food pasta places can't figure out how to dress pasta so you don't end up with a ball of sticky pasta covered in a layer of ladled on sauce. But apparently they can't.
