Hi Sun!Good afternoon Snails. Been a whirlwind of business appts, dr apts (ear/jaw infection that liked to have killed me pain wise), sleep study crap, and just daily trivial crap. Dale knows my dh does most of the cooking around here but I found a recipe on Bon Appétit that I wanted to try and it was easy AND a success. It reminds me of broiled cheese and tomato on toast but fancier and tastier.
Here ya go:
Pimiento - Tomato Galette
Ingredients -
pie crust - either homemade or frozen in pan, (if frozen then thaw and gently remove from pan onto parchment paper)
Pimiento cheese (get something good like Palmetto's or make your own)
Tomatoes (about 2 lbs)
1] Wash and slice tomatoes into 1/4" - 3/8" thick pieces. Place on paper towels, salt lightly, let sit for 15 minutes. Pat dry on top just before adding to galette.
2] Preheat oven to 400F
3] Place pie crust onto parchment paper lined baking sheet and crimp to round if needed.
4] Spread about 1.5-2 Cups pimiento cheese onto pie crust leaving about a 1 inch border to edge.
5] Start in the middle and pinwheel tomatoes in an overlapping circle, layering to the edge of the pimiento cheese.
6] Fold over bare edges of pie crust onto cheese/tomato toppings.
7] Add fresh cracked black pepper - don't add too much as it is spicy hot.
8] Bake 20-25 minutes until golden brown.
9] Use a paper towel to soak up any juice that has leaked through.
10] Cool 15-20 minutes before serving.
We thought it was great with a small side salad. If you like really spicy you could omit the pepper and try Palmetto jalapeno pimiento cheese or their bacon version. Throw some herbs on top! So many variations and so easy to make.
