Did you put a teaspoon of dry sherry in the pot just a couple minutes before serving? 
I'm a purest. No sour cream or cheese! Garnish with either green onion or possibly chives.
I used to keep a bottle of pale dry sherry around for oriental cooking and also stuff like that. Lasted years.
