Merry Christmas!!!! And happy anniversary Punkin!

Dinner rolls are rising, prime is waiting on it's seasoning. I always used the 8 hour closed door method, it never failed me. Are you doing the 500 degree, 5 minutes per pound roast time and then 2 hours with the oven off? This year I'm doing the 2 hour. *fingers crossed*

I won't lose Victor today, he's laying in front of the counter that the prime is sitting on, just in case it falls off or something. sheesh, you'd think I don't feed the boy. :lol:

Here's my old recipe that the butcher gave me, it always worked. Med on the ends, med rare in the middle:

7 hours before dinner put seasoned prime in oven. Set oven to 400F, and leave for 40 minutes if 6# or less or 1 hour if over 6#. Turn off oven when time is up but don't open the door. One hour before dinner, turn oven back on at 325F. You will need to let this rest for 15 minutes when you take it out.

I decided to do the new way because I didn't want to devote 7 hours of my ovens time today. Hopefully it wasn't a stupid decision with an expensive piece of meat.

This is close to my regular one. Only 450 30 min then I drop it to 325 till the thermometer registers 120 and take it out to rest.

It worked. My center was 129.7 when I pulled it out. I did add one minute to my cook time to make up for the door being opened a bit long while I put the pan in. I don't know that one minute would make much of a difference. It was pretty rare in the center, which is fine for Mr. V. I'd rather my meat hold still on the plate, he'd eat it as it ran past him. blech. Next time I think I'll go back to my old way.

My triple chocolate bundt cake decided to stick in one spot, so we had to eat that section because looking at it was embarrassing. I'm full as a tick. Victor is happy, he had scraps with his dinner.

Good morning everyone!

I hope everyone had a great Christmas. We ended ours on a warm and relaxing note. Sitting in front of the working gas fireplace with the lights off sipping on some Jameson with Christmas music turned down low in the background... :)
