Here's my old recipe that the butcher gave me, it always worked. Med on the ends, med rare in the middle:
7 hours before dinner put seasoned prime in oven. Set oven to 400F, and leave for 40 minutes if 6# or less or 1 hour if over 6#. Turn off oven when time is up but don't open the door. One hour before dinner, turn oven back on at 325F. You will need to let this rest for 15 minutes when you take it out.
I decided to do the new way because I didn't want to devote 7 hours of my ovens time today. Hopefully it wasn't a stupid decision with an expensive piece of meat.
