Cadbury Egg Brownies



Ingredients

  • 1 box Dark Chocolate Brownie Mix (plus box ingredients)
  • 1/2 cup Corn Syrup
  • 1/4 cup softened Butter
  • 3 cup Powdered Sugar
  • 1 tsp Vanilla
  • Yellow Food Coloring
  • 1 can Creamy Homestyle Chocolate Frosting
Instructions

  • Make brownies according to box directions.
  • Allow to cool.
  • Cream the corn syrup, butter and vanilla.
  • Slowly add in powdered sugar beating until incorporated.
  • Transfer 1/2 of the filling to another bowl and add yellow food coloring.
  • Spread yellow mixture on top of brownies and refrigerate for 15 minutes.
  • Spread white mixture on top of yellow layer and refrigerate for 15 minutes.
  • Open frosting container and microwave for 30 seconds.
  • Stir and pour about 2/3 of frosting over brownies.

Easter Pretzel Chick Treats



Ingredients

  • 24 Mini Pretzels
  • 1 cup Yellow Candy Melting Chips
  • 24 Mini Chocolate Chips
  • 2 Orange Starbursts
Instructions

  • Cut Starburst into 3 rectangular strips (1/4" x 3/4")
  • Cut each of those in half, creating 6 - 1/4" x 3/8" rectangles.
  • Now cut each of those diagonally creating 12 triangles for beaks.
  • Repeat with other Starburst, giving 24 beaks.
  • Lay pretzels out on wax paper lined cookie sheet.
  • Heat Yellow Candy Chips by microwaving for 30 seconds stirring and repeating until melted. Allow to cool for 2-3 minutes.
  • Transfer chocolate to corner of zippered bag and clip tiny piece off of corner to pipe.
  • Pipe candy over inside of pretzel to form shape of chick. Smooth with finger if necessary.
  • Place mini chocolate chips for eyes and Starburst triangles for beaks.
  • Place cookie sheet in refrigerator for 20 minutes to allow candy to set

Easter Chicks Deviled Eggs



Ingredients

  • 6 Boiled Eggs
  • 1/4 cup Mayonnaise
  • 1 tbsp Sweet Pickle Relish
  • 2 tsp Mustard
  • salt and pepper, for taste
  • 1 Mini Carrot
  • 1 Sweet Midget Pickle or you can also use a few pieces of relish.
Instructions

  • Cut small slice off bottom off egg to flatten it so it will stand.
  • Cut zig zag pattern around middle of egg to look like it cracked open.
  • Remove yolks and place in a bowl.
  • Cut carrot so that you end up with 6 small triangles to use as beaks.
  • Cut strip off of pickle and then make 12 small squares to use as eyes.
  • Mash yolks with a fork and stir in mayonnaise, pickle relish, and mustard.
  • salt and pepper, to taste.
  • Mix until consistency is smooth and creamy.
  • Transfer mixture to zippered bag and clip corner for piping.
  • Pipe mixture into cooked egg whites piping until over full to resemble a chick head sticking out.
  • Place beaks and eyes in place.
  • Top each with the bottom with its top half.
  • You can optionally shred lettuce to resemble grass to display them.

CrockPot Layered Dinner--Steak, Potatoes, Corn on the Cob



Day 232.

I made a complete meal in the crockpot last night, and it wasn't a soup, stew, or casserole. I made rib eye steak, baked potato, and corn on the cob. It wasn't soggy, nor was it dried out, and I was able to leave the house for six hours.

The crockpot rocks.


I had been meaning to try a layered dinner in the crock for a few months, now, but kind of forgot. I am so glad that Julie emailed me! She made steak and sweet potatoes that way last week, with great success.

The Ingredients.

This is what I used. You can use whatever meat or vegetables you have in the house. The trick is to not use too much liquid when cooking the meat, so the potatoes and the corn (or whatever you're using) isn't floating in juice.

--1 1/1 lbs rib eye steak
--1 T of your favorite seasoning rub
--1 T dried onion flakes (a fresh onion would be fine. I wasn't in a chopping mood.)
--2 T Worcestershire sauce (Lea and Perrins is GF)
--1/4 cup tequila (or broth, apple juice, etc.)

--2-4 potatoes
--2-4 ears of fresh corn
--aluminum foil

In my 6 quart Smart Pot, I used 2 whole brown potatoes, and 4 ears of corn. I could have fit another potato in, probably.

Put meat in the bottom of the crockpot. Rub with seasoning and onion, and flip over to get the other side. Add tequila andWorcestershire sauce.

Wash potatoes and cover with foil. Add to the pot. Shuck the corn, and wrap each ear in foil. Add to the crockpot.

It doesn't seem to matter if the potatoes are closer to the meat, or the corn. The newcrockpots heat from the sides as well as from the bottom, so everything will cook through regardless of location.

Cover and cook on high for 5-7 hours, or on low for about 8. I cooked our dinner for 6 hours on high. My crockpot was quite full.

Easy Maraschino Cherry Pie

Ingredients

  • 1 package (3 oz) Cherry Jell-O
  • 2/3 cup Boiling Water
  • 4 Ice Cubes
  • 8 oz Cool Whip
  • 10 oz Maraschino Cherries, drained
Instructions

  • Reserve 9 cherries for the top.
  • Cut remaining cherries in half.
  • Mix Jell-O and boiling water in a medium bowl. Stir until Jell-O is dissolved.
  • Add ice and stir until Jell-O cools and begins to thicken.
  • Whisk in Cool Whip to incorporate and then add sliced cherries.
  • Spoon mixture into crust and refrigerate for at least several hours.
  • Top with whipped cream (optional) and reserved cherries before serving.

If ya have lots of eggs. this is a great way to use them and it makes life easer. Good breakfast for the ride to work. I use English muffins or hamburger buns you can add anything you like very flexible recipe. 90% of the time I just whip or scramble and bake no extras. :lol::lol: I have hamburger bun pans so I've been baking the eggs in them.

Make-Ahead Baked Egg Sandwiches

"Easy baked egg breakfast sandwiches. Another frugal recipe that can be made ahead and frozen, then microwaved for fast breakfasts on the run. Try using other cheeses for extra flavor. I used Colby-Jack Slices. My boys loved this recipe!"
Ingredients
  • 12 eggs, beaten
  • 1/4 cup softened butter
  • 6 croissants, split
  • 12 slices smoked ham
  • 6 slices Colby-Jack cheese
Directions
  1. Preheat an oven to 350 degrees F (175 degrees C). Spray a 9x13 inch baking dish with cooking spray.
  2. Pour the beaten eggs into the prepared baking dish. Bake in the preheated oven until they set and are no longer runny, 8 to 10 minutes. Remove, allow to cool, and cut into 6 portions.
  3. Butter the cut sides of the croissants and place one portion of the cooked egg onto each croissant bottom. Top each sandwich with two slices of ham and a slice of Colby-Jack cheese. Place the croissant tops on top of the sandwiches; wrap each sandwich well with plastic wrap. Place the sandwiches onto a baking sheet; freeze until solid, about 3 hours. Store frozen.
  4. To reheat, cook a wrapped sandwich in a microwave on High until hot in the center, 1 to 2 minutes.

I can try that too. One of our customers said she cracks her extra eggs into baggies and freezes them. That's worth a try too. I'm at an average of 17 per day now. Holy moly.....
Their good for baking that way. 5-8na day letting the duck eggs in the nest hoping one of them get the idea. 15 in there so far.

BACON LOVERS heres one for ya.

My Grams always made it like this.But no bacon bits or cheese.I crumble real bacon up in mine but skip the cheese.:lol::lol:
Ingredients:
1/2 cup bacon grease

3/4 cup unpopped popcorn kernels

1/2 teaspoon seasoned salt, or to taste

3 tablespoons bacon bits (optional)

1 cup shredded Cheddar cheese (optional)
Directions:
1.
Measure the bacon grease into a 6 quart pot and place over high heat. Add one or two popcorn kernels as testers. When the test kernels pop, add the rest of the popcorn and cover with a lid. As the popcorn starts to pop, shake the pan back and forth constantly to keep the unpopped kernels on the bottom where they can pop. When the popping slows down, remove the pan from the heat and let it finish popping.

Pour the popcorn into a large bowl or paper sack. Season with half of the seasoned salt and stir. Taste before adding more salt if desired. Toss with bacon bits and shredded Cheddar cheese for an extra special treat. Store leftovers in lunch sacks or sandwich bags.
I did do this one, and it made some of the best popcorn I've ever tasted.
