What stops it? the fact that inside the chimney shouldn't be full of juice. Only a little amount is drawn in through the juice channels to saturate the wicks. You should be able to leave it upside down.

Im guessing the chimney top isn't getting it's seal to the topcap, and juice is leaking out. Because even with a flooded coil, the rest of the tank contents wouldn't spill through the top.
