I have read that you can use ethyl maltol for other purposes than just sweetening a juice... Can any one shed some light on these other uses for me? I have been using 2% as my standard for sweetening juices.
I have heard that it largely depends on the amount used, and this is where i get lost... adding more or less would just sweeten more or less, no?
