The only reason I can see to use high wattage builds is stuff like large elaborate coils with a "ton" of metal that needs to be heated. Even there, things can be interesting. If I hit a dual fused Clapton with a preheat of say 75-100W (and that is far from normal vaping) for 1 second I can drop everything back to 40W, and if in TC, watch the wattage go even lower to maintain the temp.

Do the more "nooks and crannies" to vaporize more juice really make a big difference in that setting? Not very much. Almost all my vaping is done with Clapton or simple round builds. It all depends on the chamber and chimney, along the airflow of the specific tank. I haven't found large coils that need 1.2kW to heat up really makes any difference other than increase my electric bill.

I don't think I've given high wattage a fair chance, although I HATED my cleto tank that the kid gifted me (to be fair, I was also going through nicotine w/d) but even vaping at 40 watts was like, ouch. I feel no need to explore further, I am so happy with my MTL setups. I still haven't really gone over like 14 watts since switching. And since I now have enough MTL setups to see me through the vacopalypse, finding out after all this time that I was a sub0hmer at heart (oh, except I KNOW I'm not, I think) would be deeply distressing.... :) to me at least, maybe not the folks who read the classifieds, as I would have much to rid myself of, so I'm sticking where I am AT.

Because I've puffed on a few cloud machines (not my own) and no, still not liking it at all :) Also, I'd probably have to vape outside if I sub0hmed, and I wouldn't enjoy that either.

Although to each their own, and hey, trying new stuff usually isn't bad, regardless of the outcome.... :)

... what I should build to showcase the value of high wattage. ‘Cause right now I’m just not seeing it.

Sounds like what you've been vaping is working well for you :)

Re: your ? above.
Attached should be image and brief description of an option. 8 coils each with individual wicks with two tails each. 4 pair of 2 coils in series, for 8 total. Open center channel for full dropper dripping. Open channels above/below each coil for even airflow.

This was from couple years ago, but still pull it out & comparitive vape it from time to time.

In no way do I mean to indicate this is a favorite build, just something to consider. Combining series & parallel s/s coils in this build was the result of learning options related to s/s wire back when most thought s/s was unsafe to vape.

For me, two goals typically. Dense cloud vapor & flavor (MTL or DTL same goals apply). Flavor over vapor priority wise.

I really like juices that respond, with varying flavors too by changing power to coils. Example: a Blueberry CrumbCake that tastes like fresh blueberries at 40w, cooked sweetened blueberries at 50-55w, and a more savory hot blueberry crumbcake at 60-70w.

IMO, different juices respond differently to different builds and powers. It's not just about high vs. low wattage or spaced vs. contact coils or Clapton vs. Staggered Clapton. It's building what works for your specific needs & affections.

I tried high wattage once. Did a .25 coil at 40 watts. I really enjoyed the massive, flavorless clouds and 3rd degree burns from my teeth to my intestines. Burping was made a new with watching chunks of flesh particles come out. I'm sticking with mechs a 1.25
