I get so tired of trying to come up with something exciting for 1 person. Tonight, leftover spaghetti.Yippee
Oh this is a good thread for me cuz I'm a cooking HO!!! My hubby won't even go out to eat anymore so maybe I should start cooking bad. hehehe
Tonight is porcupine meatballs.
Get about 2 pounds of lean hamburger 20%
Get a box of Zatarain's New Orleans Cheddar Broccoli Rice Mix
2 eggs.
Mix all of that together and make meatballs and put on broiler pan in oven at 375 for about 25 minutes to brown them and to get rid of some of the grease.
Put meat balls in a large skillet that you can cover and dump over 2 cans of tomato soup and about 1 can of water. Mix all up and let come to a boil and then put lid on let simmer for about 40 minutes until the rice starts poking out of the meatballs.
Make up a pot of white rice and serve the meatballs over rice.
It's yummy. LOL

I have some hard core food restrictions, so I'm not really even allowed to use anything processed for the most part, so no Zatarains for me
Sick of cooking or not, I mostly have to, so tonight is a savory beef and mushroom pie and a garlic sauteed fresh veg mixture of broccoli,onions and peppers.
oh...and all of the above is gluten and milk free.
Mike cooked tonight (and cleaned up). A night off for me! He made hamburgers, fries and milkshakes. I love "diner" at home nights.

Of course as I have said before, we are easily fooled by on-line personalities.
What is clotted cream by the way..it sounds like cream cheese or sour cream.
