The 8% doesnt scare me, the fact that its TFA's honey kind of does. I get an off note at .25. But hey, thats why we all mix different.
TBH, I have only used TFA Honey, so I have no means of comparison. Scooter's recipe is one of those that lends itself well to adjustments and substitutions without adverse consequences (for me anyway). If it has any interest to you; I wouldn't hesitate to use subs you feel more comfortable with!:)

I would try Acetyl Pyrazine. Less is more with this additive. More than one percent or so and I get a Frito lays flavor that is not so good.

I've sensed the excess nuttiness and potato chip flavor from too much AP.

I like AP in some tobacco vapes, but for my tastes I've settled at no more than .5%. 1% is a little more kick than I like personally. It's easier to add more later than to take away by diluting.

Ethyl Maltol in small amounts (.5%) adds fullness. Too much and I get an undertaste that is sickly sweet. I used to hate that in vendor juices and using EM revealed that it was what I was sensing back then.
