My mom smoked for 40 years. I worked for months and finally got to to try vaping.. she's been vaping for just about a week now and suddenly thinks "she should be feeling better than she is" and isn't convinced e-cigs are as healthy as they claim to be. Is there a link I can show her to put her fears/ disbelief to rest?

It takes time for the body to adjust to the benefits of not smoking. Encourage her and tell her she is already reaping some of the benefits. ( Mainly she doesn't smell like cigarette smoke all the time. ) Remind her that her sense of smell will start improving soon and her taste buds should start working better shortly after that.

I made a comment to a Dr just last week that I feel worse now than I ever did smoking. She told me it could actually take a couple of years before a person will feel the full benefits of not smoking and it is common to not feel all that well at first.

So as oldsoldier said, there are some benefits that you can reap rather quickly but there are others I guess we have to wait for. Personally, I think that sucks. =)

JGD....may I suggest you go to the General E Smoking forum and find the thread for 55+ vapers. There is a ton of testimontials on there from older vapers and their health improvements after making the switch from tobacco. I think if your mom started reading those posts, she would be more receptive to vaping and its benefits.
