I've seen a ton of recipes for Grants Vanilla Custard. The most common is: 15% Capella VC, 2% TPA (is this the same as TFA?) Dulce De Leche.
However, I have also been told to drop the amount of VC for larger batches. Someone mentioned that 7.5% VC and 2% DDL would be excellent.
Has anyone made a 75ml+ sized bottle? If so, what were your numbers.

I am considering mixing a 80ml bottle at 12% Capella VC and 2% DDL. I know that the DDL is rather strong, so I am concerned that it will over power the custard.

I do it always at 7,5% VC + 2% DDL. Larger or smaller batches. In a blind test, I don't think I would tell the difference from the original.
DDL is indeed strong, and the secret is no secret at all, just let it steep at least 15 days.
The original GVC is sold only once each 28 days ;)

I was wondering on your ratio, is this mix a 90.5/9.5 VG/PG ?
