Boneless chicken thighs, soy sauce,white wine, soy sauce, garlic , onion , peppers, black pepper, salt, diced tomatoes a few other odds and ends, going into a 350 degree oven once it gets up to temp.

That's how I won over my wife's mother. The first time I was brought to meet her, I threw her out of her kitchen and cooked dinner for the three of us. In like flynn!!! :D

I came home to a house full of dirty dishes and out of food.... I was only gone for 2 days..... Now I have to go to the grocery store and do the dishes.
But I did leave my car at my moms when I borrowed my sis's car for the trip and she washed and detailed it while I was gone LOL So that was a cool bonus!

Quite a spread Opt. I usually use more lump charchoal than I need and the wife fusses because I keep asking "Are you SURE there isn't anything else you want grilled?" LOL. I usually use the reast of the heat to roast heads of garlic for the year to put in the freezer. Grill 'em, peel 'em, roll it up in parchment paper and in a sealed freezer bag.

forgot the lamb i did this weekend too..this is after marinating and spiced..

I also did a giant salmon over the grill on the 4th and another this weekend as well, no pic on that sadly, but was incredible.

Also, let it be known.. I grow my own rosemary and mint used on that lamb as well as a few other fresh herbs and spices to use in my mixes.. Top shelf cooking right there.

That's the best way to do it. The stuff in a jar can be used, but it doesn't compare to fresh herbs when you have access to them in the market or grow them yourself;)

Thanks! Yeah I love to cook and grill. Secret is to cook everything slow and low! You can always add more charcoal but hard to take it away! Cook low heat, or indirect heat and give it at LEAST 3 hours, and you'll always have delicious meats!

Sure did, wasn't much left but I did enjoy Lamb, salmon and sides as leftovers for breakfast and lunch the next day lol.

Had a few at the party sincerely tell me it was the best meal they've ever had.
