Mornin all! Happy Maundy Thursday!
Gratz Del!
Love the gator, Gator! :D

Update on the new range: I was on the phone this AM with the Frigidaire rep, and she told me to turn it on and check again, as it takes 6 minutes for the fan to come on. So I did, and sure enough, it works. As far as why my friands didn't turn out well, it turns out that while the convection feature is great for cookies, biscuits and such, it doesn't really work for muffins and cakes or anything with a high-sided pan; the air can't get to the dough. I did some searches on the internet; there's nothing in the instruction booklet on this unfortunately, though it does make sense.

Oh it will bake just fine; I just shouldn't use the convection feature with it. What happens when you turn on the convection feature is that a fan in the back of the oven turns on and circulates the heat in the oven. When baking, they recommend you turn the temp down 25 degrees; when roasting, cut back on the time. It's supposed to provide more even cooking and you supposedly can bake multiple sheets of cookies at the same time w/o having to rotate the pans. I've just got to learn when and how best to use the feature.

Bro can still use convection with those pans the only diff is that it doesnt shorten the bake time all that much with high sided pans like it does with open ones. But it does just not that much i would say it would shorten the time by say 5 to 10 min. You just need to keep an eye on it and tooth pick test them till they are. As time goes by and unfortunitly with trial and error you will learn the new times for cooking things in convection. What i do with high sided pans is that i bake in normal mode and when its just a little more then pass the half way point turn on the convection and things turn out beautifull. Crispy on the outside and juicy tender inside. And shortens time buy 5 or 10 min.

Aslo does it have an an auto adjust for time and temp feature? What mine has is in the feature menu. I put in the reg bake item and temp then it auto caculates and adjusts convection for you.

Nope. It does have a temp probe that I plan on using on my pork roast I'm cooking for Easter. With the probe, once it gets to the desired temp, it goes into Warm mode so the meat doesn't overcook.

I've already planned to play around and experiment with it. I'm going shopping tomorrow to get the stuff for Easter; I'll get the stuff and make some Snickerdoodles; I'll try the first pan lowering the temp like the owner's manual recommends and cook the full time and I'll cook the second pan at the regular temp and lower the time. It'll be interesting to compare the 2 I think.

Reidus or anyone for that matter. You should get and read and use this book for reference its what we used when i was in cooking school. Updated of course cause i was in chef school back in 91 lol.

Professional Cooking, 7th Edition: Wayne Gisslen: 9780470197523: Amazon.com: Books

Wow! That book looks great! I'll have to add it to my collection. I've also got Larouse Gastronomique, the Joy of Cooking, and a whole host of other cookbooks.
Actually, I might hold off and put it on my birthday wish list, lol.
