Wow I think I need to plan a trip to NO!Wow! Now that it's summer, I'm back into making ice cream. In prior years, my bible was the "Ben and Jerry's Homemade Ice Cream Cookbook". It's a great read and makes a damn good ice cream. That said, this year a friend recommended that I read David Liebowitz's "Perfect Scoop". So I got it and just tried his Chocolate Ice Cream. Again, Wow! It's a much smoother and richer ice cream than I remember B&Js to be. That's probably because 1) it calls for 5 egg yolks, as compared to B&J's 2 whole eggs; and 2) he basically has you make a custard (warm the milk, temper the eggs, cook until it coats the back of the spoon) where B&J just has you add raw eggs (though I always nuked the base to 170 degrees, just to be safe). Anyway, I'd recommend either of these 2 books for you ice cream aficionados. Can't wait to get home from school tonight and have a cup of coffee, fill my Magma with the last of my Sir James and have a bowl of deliciousness.
