Oh man, must haves are tough. I use CAP supersweet as a sweetner, I'm okay with sucralose as a sweetener, I know how it performs and how my body reacts to it. I haven't tried Xyletol yet as a sweetener but someone sent me some to try, and I will be doing so at my next mixing session. Will probably halve a flavor and try supersweet in one and Xyletol in the other, to see what the differences are.
One additive I use pretty frequently is MFS wizard, it gives more "mouthfeel" and a sort of almost smoky kind of thing happening (but not cigarette smoky, more like IDK, I'm not quite sure how to describe it, but I like it a great deal, more than I thought I would. I don't use it in all my mixes, but in many.
As far as the rest: All I want is everything. LOL, in all seriousness, let me think, I often use marshmallow or merengue for depth and sweetness or cotton candy (these flavors all contain ethyl maltol to make them sweet, so I use them sparingly as too much EM can mute things.) But, I do like the layering and depth they add to some of my mixes.
My flavor profiles are fruit, bakery and deserts, as well as some of the alcohol flavors, but I've gotten more into citrus and mint as I progress down the DIY trail. (IMO) you can't go wrong with purilum flavors, I am also partial to FA, and sometimes Capella, and really though, there are must have flavors for certain profiles but as far as really narrowing it down, well, I probably would suget buying in tester sizes at first and even trying some flavors from different manufacturers that are the same "flavor" but each can bring a little something to the mix, and sometimes that can be nice in terms of adding depth and flavor.
It's just so hard to say: must have flavors for me. I did a lot of juice tasting and recipe reading to get a sense of what my flavor profiles might be like and kind of went from there, although I didn't sweat it TOO much, as I knew that regardless of my preparation level, I was going to have to start SOMEWHERE, so I did.
But, I also hope that some of the suggestions are helpful and it's great you are doing your research, and you have tons of flavor masters on this thread giving you a ton of good information.
