Do more experienced users really outgrow 30W VV/VW setups?

Some do, some don't - it's all down to what you want out of your device and how you like to vape. For me, personally? Been vaping for close to two years, and have absolutely no use for even a 30W device, much less something with a higher wattage output. There's no right way or wrong way, just your way.

Yep. I quickly outgrew my 15w zmax. Jumped right up to the 100w plus and I don't think I'll ever run it that high. Lol. Right now the most I've run it to was 62w. Any higher than that with any of my builds made the vapor too hot.

I am now considering a box mod actually after seeing how long a cylindrical setup would get. And as I value battery life I might go for a Sigelei 100W Plus. Not for the power, but for the combo batteries, and the extras with magnet back panel, spring 510 connector etc. For the price point seems nice, and there's more than enough room to experiment on different settings. After reading a bit I don't think I might go high wattage. I guess a 50W mod would do more than enough for me but since battery life is very important and the price isn't far off the Sigelei 100W Plus seems like a good deal for me. Should last me 3 days with no problems.
I'm not looking for thick clouds but I don't mind them either.
Right now I can't afford a Provari, or at least justify the price. Don't have that kind of cash.

The vaporshark rdna40 for 190 has been great for me with pass through and a removable 18650 or the smith from beyond vape for 130 it's an ipv3 with a bunch of improvements either one would fit your needs perfect paired with the atlantis tank it's the closest thing to having a dripper the airflow can go from mouth to lung hits to wide open straight lung for on the go vaping can't be beat

I'm a believer in spending money once and getting quality durable items so anything under $200. Would rather have a mod that last a looong time then save a few pennies and get a cheapy that will break.

You'd want to look at provari.

Also have a look at the REOs but most of those are not vv/vw.

No. Really, the only thing that requires more watts are sub-ohming (less that 1 ohm). Those increased watts create more vapor.

As far as getting an enjoyable flavor with a decent amount of cloud, it really isn't necessary. 20-30 watt is very plenty. 40 watt mods are coming out, but they include a temperature monitoring system. Using standard equipment and not sub-ohming, you will be hard-pressed to have a temperature issue.

I would stay in the 20-30 watt area and then get more tanks/RTAs. I use 5-6 different toppers a day because I change flavors. You can get a quality MOD for less than $100 and then have money left over for all of the associated stuff.
