Equivalent to Capella French Vanilla?

I received 6 new concentrates today from Capella and TFA. I'd like to try adapting an apple pie and custard recipe from someone and would like some advice please. He says after 10 days it's perfect, lovely and sweet. I'm going to make up a 5ml sample.

The recipe is
10% - Apple Pie V2 (CAP)
5% - Custard v1 (CAP)
3% - French Vanilla (CAP)
3 drops/10ml - Stevia
2 drops/10ml - EM

I've got the Apple Pie V2 and Custard V2. Do you think 5% will still be fine for V2 Custard? I ask in case the V2 is weaker, but, it smells quite potent.
I don't have French Vanilla. But I do have Flavour Art Custard Cream, FA Vienna Cream and FA Vanilla Bourbon. Would any of those be a good substitute?

I don't have Stevia but I have Capella 'Super Sweet' Sucralose. Should I add 1 drop? I also have TFA Brown Sugar.

I have EM but don't know if I'll need it.

Oh, and I also have FA Cinammon, FA Marzipan, and Dark Delights Almond. Wondering if I should add a tiny bit of one of those.

EDIT: Actually, not to worry. I've decided I'm going to make this up:

10% - Apple Pie V2 (CAP)
5% - Custard V2 (CAP)
2% Vanilla Bourbon (FA) as I don't have French Vanilla.
1% Cinnamon (FA)

A drop of Capella Super Sweet, maybe two. And maybe a drop of Brown Sugar.

Sounds tasty, but not at all like the original recipe. Who knows, yours might be better, let us know.
