Well, I'm just now getting a chance to get back here, and the day's more than half gone already! I've been in the kitchen making half a gallon of yogurt, a quart of clabber (@KatzWh1skers knows what that is, don't you?), 2 pounds of cheese, which isn't finished, but I'm almost done with the curds, a bottle of homemade fly spray for the cows, and washing two dozen eggs, as well as all my regular daily stuff. I still have to make a batch of mayo so we can have tuna sandwiches tonight, 'cuz NO WAY do I want to turn on the oven or even a single burner! LOL! It must be over 100 degrees in my kitchen right now.

Today I really do feel like this little guy... :tumble: Wish I had some o' that tekkeeeeeela! ;)

The local shopping mall has closed its major parking lot as part of their renovation project, but the mall itself is still open. This has created December 24th-like parking every day for the past week and disrupted traffic in the area, as people wait for several signal-cycles just to get into the open portions of the parking lot. I was told by the manager of one of the food establishments that they were told the situation would be like this for 2-3 years.

LOL! No, I wasn't cooking today! ;) Except for heating the milk to make the yogurt. Clabber is cultured milk. Like the buttermilk you get from the store, but a solid soft curd. My clabber is "original," meaning I started it from fresh milk a couple of years ago, and keep making new batches from the previous batch. It just keeps going on and on forever, if you don't let it get old and go sour in the fridge. I think I'm on 2 or 3 years with this current batch. You can also make it (I consider it "cheating" but a lot of people do it this way) by warming up some milk and adding some cultured buttermilk from the store, and then reculturing until it gets to the correct consistency, which is firm like yogurt, rather than runny like store-bought buttermilk.

Anyway, you can whisk clabber, thin it with some milk and have cultured "buttermilk" (which is not REALLY buttermilk at all), or you can very gently break up the mass into smaller bits, heat it gently over low heat until the little curds firm up, then drain it, salt it, add cream and have cottage cheese! It's sooooo good! Way better than the stuff in the store. In this case, though, I use my clabber as a starter for my cheese, along with yogurt. Gives the finished cheese a nice cheddar tang. I was getting low on both, so I had to make new batches of them, as well as the cheese. And now the mayo is made and chilling, so pretty soon I gotta go open a couple cans of tuna and "make dinner!" LOL! I like easy dinners!

Here's a flowering wild plum (you've never smelled a sweeter smell, BELIEVE ME!) with a couple of our cows:

Oh, I almost forgot, no I don't have a recipe for that kind of cheesecake. Mine is the simple one (I love it the best, though), with just eggs, cream cheese, sugar, and a splash of vanilla. Better with fruit on it. :D

Got another mall you can go to?
Several... but none of them are 5 minutes away. All of them have parking issues (this is true for all of the strip malls--with grocery stores and so on). One of them is even designed to flood when it rains (no joke!).

Good evening everyone!
Hi there, Gene. Welcome to the vape Tree house.

Hey gang, I hope everyone's doing well on this lazy Sunday. Been busy here and just now hopping on the forums. I cleaned out the Nautilus Mini and put some Gooey Cinnamon Roll in there and wow it's like you're vaping a cinnamon roll fresh out of the oven. This is one of my first bakery flavors I've tried and it's fantastic. Not too sweet, just right. ;)

Took a nap. Nice...

Welcome, Gene...

Lannie, we raise goats... had a fresh farmer's cheese with lunch. Instead of clabber, though, we have kefir and we use that all the time to give cheese that tang and in smoothies.

Mmmmmm... cheese...

I've never had goat cheese but would be interested to try.
