I'm a pretty good cook, but most of my recipes are neither kid friendly nor fast... plus 1/2 of them are in my head, since I usually don't write things down... LOL!!

But I also collect Recipes and Cook Books, so here are a few that I thought might help:

Tip

I fry a bunch of hamburger on weekends and freeze it in baggies. Easy to pull out and put in lots of recipies.

TACO SOUP IN A CROCKPOT

2 cans of kindey beans
--2 cans of pinto beans
--2 cans of corn
--1 large can of diced tomatoes
--1 can tomatoes and chiles
--1 packet taco seasoning
--1 packet ranch dressing mix
--1 lb browned ground turkey or hamburger

shredded cheese and sour cream for embelishment

-brown meat if you are going to use it
--drain fat and add to crockpot stoneware insert (the meat. not the fat.)
--sprinkle seasoning packets on top of meat
--drain and rinse the beans and add
--add the ENTIRE contents of the corn and tomato cans
--stir.

cover and cook on low for 8-10 hours or on high for 4-5. I think the longer you cook soup, the better, so if you have the time, opt for cooking on low. Stir well, and serve with a handful of shredded cheese and a dollop of sour cream.

Freeze leftovers

My ex mother in law use to make something like this but with black beans, then the next day she would turn the left overs into a casserole by adding layers of corn chips and cheese

BLT Pasta Salad

1 cup mayonnaise or 1 cup salad dressing
1/4 cup lemon juice concentrate (yes, a quarter cup)
2 teaspoons sugar
2 teaspoons chicken flavor instant bouillon
1 (7 ounce) package rotini pasta or 1 (7 ounce) package other pastas, cooked and drained
8 slices bacon, cooked and crumbled
1 large tomato, seeded and chopped
1/4 cup green onion, sliced
4 cups lettuce, thinly sliced


1. Combine mayonnaise, lemon juice, sugar and bouillon for the dressing.
2. Combine rotini, bacon, tomato, and green onion.
3. Can be made the night before, but add lettuce right before serving.

I am making this tonight. Kids love pasta salad!

Posted this one years in the rimfirecentral forum, they have a lot of cookout and camping recipes that can be easily be converted to kitchens.

Basic recipe:

1-2# meat
1 large onion
1 can pintos or navy beans (with jalepenos is not necessary and may be too hot for some)
1 can small red or kidney beans
1 can diced stewed tomatoes
1 can tomato paste or tomato soup
1-2 serrano peppers
chili powder (1 to 2 tablespoons at first should be fine)

Brown meat along with chopped onions and chopped peppers and chili powder in a skillet.

Add everything else to pot and start heating.

Add meat/onion/peppers/spices to pot.

De-glaze skillet with vinegar and add to pot. (means let the empty skillet heat up and pour some cold liquid in to boil the good brown stuff off of the bottom of the pan)

NOTE (I have found that adding 1/4 cup of ....e vinegar to 1# or 2-3 cans of beans greatly reduces the amount of gas your digestive system produces, works with ANY bean recipe)

Simmer and add more chili powder till ya loves it! (when adding spices, wait 1/2 hour cooking time, taste THEN add more)

Fancy Recipe

Same as above, but add....

1-2 diced carrots
2-3 diced celery stalks
2-3 cloves fresh crushed garlic or powder to taste
Black pepper
(can you say mirepoix?)

After that a bit of this and that...

cumin
lemon
worchester
nutmeg (the secret meat spice nobody gueses seriously try it on steak or chicken)
cayanne
tobasco.......

Beer, but you will need to raise the temperature to a boil it back down again. (best done midway through as the sudden drop in temperature will interrupt and then re-start the cooking) (The temperature interuption is not a bad thing, I do it deliberately with an ice bath if I have the time as it works well for any bean or tomato based soup) (ever notice how beans, chili, spagetti or pizza is usually better the second day?)

Serve with diced onion, chedder cheese or crackers according to your taste.

This is not my recipe, but I have been using it for years in the cold months. Per my earlier post, any recipe with beans can use some vinegar to help reduce flatulence 1/4 cup per pound of meat or beans or 2-3 cans is my rule. Seriously this can make your home a much nicer place to live.....

I usually make up baggies with the necessary dry and or canned ingredients, then all I have to do is brown the meat chop an onion and toss the rest in a pot.

Can be eaten in as little as 1 hour, or crock-potted all day

Anyhow the recipe with full credits.

Back Porch Soup (by Swampman of Rimfire Central.com)

I love this stuff. Make in camp or at home

Back Porch Soup

1 pound ground meat, browned and drained
1/2 cup chopped onions, sauteed
1 package taco or chili seasoning mix
1 (1-ounce) package dry ranch dressing mix

Brown meat and onions, drain, add taco seasoning and dry ranch dressing mix. Place in a 5 to 6 quart cooking pot.

Add:

1 (15-ounce) can kidney beans
1 (15-ounce) can whole kernel corn
2 (15-ounce) cans pinto beans
1 (15-ounce) can diced tomatoes
1 (10-ounce) can Rotel brand tomatoes (mild or medium)

Cook over medium heat for about 40 minutes or in a crockpot on low for 4 to 6 hours.

Serve over Fritos brand corn chips and top with grated cheddar cheese.
Or Serve over Rice.

Serves 6 to 8.

Zesty Chicken Sandwiches
4 boneless chiicken breasts
1pk onion soup mix
1/4 tsp garlic powder (or 1 clove garlic)
1/4 c Italian salad dressing
1/4 c water
Sandwich rolls, lettuce, tomato, onion, sliced cheese, sour cream, ranch dressing or blue cheese
Place chicken in slow cooker(if desired brown in pan first) sprinkle with soup mix and garlic powder or crushed clove or garlic. Pour salad dressing and water over chicken, Cook on low for 8-9 hrs. Remove chicken and shred with forks. Return to slow cooker so that pan drippings will coat. Serve on rolls, garnish as desired

Tip:

When making pulled chicken or pork, most recipes will say "shred with a fork" i did it this way for years until I saw a North Carolina BBQ joint on cable doing it this way.

Put the meat which should be cooked enough to pretty much fall apart into a pot.

chop it up with a spatula.

It is that easy.

Sticky Pork Chops

4 lean chops, trimmed
1 tbsp all purpose flour
2 tbsp oil
2 onions
6 tbsp veg stock
4 tbsp dark soy sauce
4 tbsp tomato puree
3-4 tbsp soft brown sugar
4 tbsp dry sherry
Salt and pepper

Season the chops then dust in flour and shake off excess.
Fry off the chops in the hot oil until browned lightly, then place in crock pot.
Add onions to the pan (skillet?) and cook for a few mins then add the rest of the ingredients and bring just to the boil.
Pour over chops.

Cook low for 5-7 hours.

Doggie Soup

In your crock, combine the following:

Tomato soup, diced onions, sliced hotdogs, uncooked rice & dried parsley. Add water or beef broth to make it fairly thin. The rice will thicken the soup as it cooks.

Bring it to a simmer on high & then set the heat to low. Stir the soup every now & then so the rice doesn't stick.

This is a thick soup & you can tweak the seasonings in many ways.

We have it with saltines. I crumble them in my bowl & mom has buttered saltines on the side.

Good one for a hectic Saturday or Sunday. Needs a little attention but not a whole lot.

Mix in crock pot:
1 (1.25 oz) envelope dry onion soup mix
1 t. oregano
1 t. red pepper flakes
1 t. basil
1 t. dried parsley
1 large clove garlic, smashed
3/4 cup water
Place on mixture:
3 lbs. Roast (rolled beef roast, chuck roast, rump roast)

Cook on high all day, or until meat is tender. Turn it over every now and then if you can. If not, that's okay too! Shred the meat, let it simmer in its own juice for a while, and serve on buns or hard Italian rolls.

Ingredients:

2 lbs boneless, skinless chicken breast
black pepper, to taste
1/3 cup low-sodium soy sauce (tamari for gluten-free)
1/4 cup honey
1/4 cup tomato paste
3 tbsp rice wine vinegar
2 cloves garlic, minced
1 tbsp water
1 tsp sesame oil
1 tsp onion powder
1 tsp sriracha hot chili sauce, or more to taste
1 heaping tbsp cornstarch
1/4 cup water
1/2 tbsp sesame seeds
2 medium scallions, chopped for garnish



Directions:

Place the chicken in the slow cooker and season with black pepper. In a medium bowl, combine soy sauce, honey, tomato paste, vinegar, garlic, 1 tbsp water, sesame oil, onion powder and sriracha hot chili sauce. Pour over chicken and cook on LOW 3-4 hours.


Remove chicken, leaving the sauce in the slow cooker. Shred chicken with two forks; set aside.

In a small bowl, dissolve cornstarch in remaining 1/4 cup water; add to the slow cooker and stir to combine. Cover and cook on HIGH until slightly thickened, about 15 to 20 minutes; return chicken to the slow cooker and mix well.

Serve chicken and sauce over rice and top with sesame seeds and chopped scallions for garnish.

Enjoy!
