I don't know how people can let a job that pays for their food, housing, medical needs, transportation, supplies of every kind, and entertainment get in the way of talking on this forum. It just doesn't make sense. But then neither does a lot of things I say on this forum.![]()

... and a brutal 13 hour shift to earn all that extra money. iHurt. A lot. I knew I was going to get a raise, but I didn't expect it for at least a month or 2. Apparently I've progressed more in a week than my predecessors did in 2 months. I'm still not happy with my French breads. "They're all salable," is NOT good enough. I made & packaged dozens of loaf breads, 16 focaccias, a pile of baguettes, hoagies, artisan breads & 25 dozen hand tied bagels today, from scratch... all by myself. Did I mention I hurt? A lot? Between the mixer, the prep table, the proofer, the oven, the cooling area & the packaging area, I put on some miles today.The only batteries I have good luck with are the flame jacketed trustfires.
