You would need a Middle Eastern or VERY country background, the poor farmers called it “shelf milk” because after milk is turned into kefir it won’t spoil, it gets more sour and separates but won’t turn, like cheese once the bacteria and yeast [and whatever other critters grows in the grains] takes over the milk other critters can’t colonize and spoil it. If you like buttermilk (the kind that we buy now and is cultured, not the real stuff) it’s good.I am from an agricultural background and I have never heard of them.
