......we eat vegetables. I could almost go vegan, but I can't give up cheese.

Yeah, that is the deal breaker for a lot of people, my wife included. I guess I am lucky in that I have had absolutely no problem giving any of it up. I have known a few people that tried it and just couldn't do it. I'm not one of those self-righteous vegans that go around telling people what not to eat though so don't worry about that. I am most likely the least judgmental person you could meet.

I've got some good Quinoa recipes. Vegan as in no eggs or milk products? (I get confused...some are vegans and some are really, really vegans :))

Vegans don't use any animal products whatsoever, or anything tested on animals etc. I am not one of those, I just stay away from meat and dairy when I can. Occasionally I will accidentally get some cheese in something and eat it. When I travel sometimes, especially to other countries I have to become pescatarian and eat fish or I won't get enough protein. I usually am able to take my blender and shake mix with me though.

Sounds good, I would have to substitute the chicken and cheese though.

I use T.V.P. in a lot of stuff, it has the exact consistency of ground beef and takes on the flavor of whatever your cooking it in, it's amazing for Spaghetti, taco meat, chili etc. and is very good for you.
