I've been up since before 2 a.m.; guess I'm stressin' a bit, lol.

If you guys like the Mexican & simple you might enjoy this:

Enchilada Cake:
8 totilla's
8 ounce can of enchilada sauce
Shredded Chicken (we prefer hamburger)
Shredded Cheese
Layer in a round cake pan
Bake about 20 minutes or so at 350 I think
Of course you can add whatever you like to that, tomatoes, black beans, whatever
I like to serve ours on top of salad mix

Your recipe looks really good too!!! Really except for refried beans, that's about the only ingredient that not in mine. Kind of a Mexican Lasagna, if you will.
