Poutine is sooooo Good!!

Just made some and it I feel a tad happier. Today has sucked and Poutine just kinda saved it, at least a little.

Look good now that I know what it is I want some- That made me sooo hungry.

What kind of curd cheese do I use? In Mexico that have a curd cheese (they sell here) that is called Queso Fresco (Fresh Cheese in Translation) I love it- it's like thick cottage cheese with not a lot of flavor to it. Looks kinda the same.
