I am working on a simple caramel recipe. I would like to get the caramel flavor to stand out more.
Vanilla Custard, Capella 4%
Bavarian Cream, TFA 4%
Sweetener, TFA 4%
Caramel, Capella 7%
As is I can taste a vary slight caramel. I tried to up the caramel to 10% and then the caramel flavor became weaker.
Is there any way that anyone knows of to get the caramel to stand out. Any suggestions will be really appreciated.
Thank you

FA and TFA (original) are reported to be very good caramels. Could consider a different brand (FA/TFA Orig?).
The caramel, custards and cream's molecules often take a longer time steeping than the smaller fruit molecules. Some custards are steep 3-4 weeks or more for some folks.
Regarding Sweetener at TFA 4%, may work for you. I find that any use of TFA sweetener over 2% tends to mute other flavors for me. Might try using:
TFA sweetener 2%
+ FA Meringue 1%
(if need be) + TFA Marshmallow 1%

I'm not wild about caramel because, I too, find it weak and hard to taste. You may fall into my select group of folks who have trouble tasting the caramel flavor or have not found the right mix/blender.
Recommend, if you decide to give up as I have, there are way too many other great flavors to enjoy other than caramel.

The caramel that I have is Capella's. I may just try some TFA. Thanks for the input.

You may have over flavored. Let it steep for a few weeks. Those flavors require time to mature. Don't be surprised if after a few weeks the caramel is over powering.

Also, in my experience, vanilla custard, if not going to be your top flavor note, gets very overpowering at more than 1 or 2%.

If used as an accent then 1 - 2% sounds about right.

I just did a nice creamy strawberry using 7% TFA strawberry extra and cap vanilla custard v1 at 2% and it was very creamy and smooth with the strawberry right up front and not over powering.

Do you think if I sub Cap Strawberry sweet or TFA Strawberry ripe with VC1 at those percentages it would turn out ok? I only ask is I have those two, and some Inawera Shisha sweet Strawberry and maybe you tried them already. I get nothing but cough syrup out of any mixes with the Inawera by the way.
