I should have posted this days ago. But...none of you mentioned ham... uhmmm...recently....
What do do with leftover ham:
AttyPops's Deviled Ham. (Similar to Underwood, less fatty and MUCH less expensive)
Trimmed ham (you don't have to be TOO picky, but get any grizzle-ish stuff out. Also trim off any skin...sorry...but it won't blend well and ends up being chewy in the mix)
So you start with nice clean lean ham chunks. Cut into cubes.
Throw in food processor. Process until it looks a lot like hamburger.
Add some water....about 1/4 cup per pound. You can add the salt from below to the water if you want. This will help it mix/process in the mixer.
Also add about the same amount of low-flavor healthy oil...like canola. Olive oil is too strongly flavored. So are other oils like walnut, etc.
Good amount of salt, good amount of paprika, pepper, Tabasco sauce, dry mustard, onion powder, garlic powder and the all important heavy dash of turmeric. You can use prepared yellow mustard too...but that has salt and vinegar in it so be careful you don't get too much salt or too much vinegar flavor.
