... back legs "lock" into the holders ...
... There should be holders screwed down into the floor that hook the back legs ...
... make sure the legs lock properly ...

??? !!! ???

News to me!!!

Or is that for gas stoves only, so as to not rip the gas line from the wall???

Either. They should pull out easily. Gas OR electric. A gas stove MUST have enough line to pull it
out. Otherwise it could never have been installed... unless it was there first and the house built
around it. <<< THAT is why the hot tub here could never be removed intact. It was set in place
and then the addition built around it. It would have to be sawed into pieces and carted out through
a door.
That sucks. Sure you can't tip it on it's side and maybe remove the door (and/or the door + frame)? Most are narrow (well, short) enough to fit through a door.

It's 8' x 8' x 4'-or-so. If need be, we'll turn it into a planter or just have a floor built
over it (it's almost flush with the floor... just the cover is above floor level).

They're cheap and a good idea. Get em at Lowes or Home Depot or wherever.

Before you slide the stove out next time, just mark the back leg positions on the floor with a marker or pencil. (assuming you can get under there...like a drawer removes. Otherwise measure and calculate. Slide it out, install brackets, slide back in.
