Atty-How do you brine pork chops?

OBG-How long to you cook your stuffed pork chops in oven at what heat?
I only have one answer though. ;)

The simplest brine is just salt-water. I add other flavors.

While mixing the brine, of course before you add any raw meat, taste it. It will be salty, but you could add the salt last if you wish and taste it before salting.

Things to add/do:
Substitute apple juice for some of the water/sugar.
Add some sugar...I like a pinch of brown sugar.
Add soy sauce...not much...but it adds "meaty" flavor to foods.
Use some apple cider vinegar to add tang (maybe a T or two).
Onion, garlic, celery, herbs and spices (coriander seeds and pepper corns are good)

So, I do everything by taste, so I can't give you an exact recipe. But try:
4 c water
4 T salt
1 heavy pinch brown sugar.
1/2 onion, sliced - optional.
"dash" soy sauce - optional.
If you want optional tang, add 4 T apple cider vinegar and maybe more sugar to balance the taste out.

Soak chops in brine. If you only have an hour, use cool water and soak on counter-top, or if you do it overnight or more than say an hour, soak in fridge to be safe.

    Bourbon Fire, according to reports, has requested a Brush Fire Task Force for an estimated 600-1,000 acre brush fire in the areas of 11235 Cicero Creek Rd. And 12903 State Highway N, at this time. According to a report moments ago ambulance personel was called to the area for a firefighter with smoke inhalation. The Sullivan Independent News has a photographer making his way to this location and further updates will be provided!
