Hey Tibs. Can I do this with Russets?
Easy No-Mayo German Potato Salad - Wishful Chef

I'm looking for something to go with ham, and I thought a vinegar based version of potatoes would cut through the richness of the ham, rather than doing cheesy or scalloped potatoes.

right from your link: Make sure to use red potatoes for their tender yet firm texture when cooked, you don’t want a mushy consistency in your salad.

and i agree ;) russets won't do!

I read it. That's why I bothered asking in the first place!

But too late, I'm trying it anyway. I kept the skins, and I'll try not to over-cook them. The dressing is tasty.
