    and for that @SilverBear ;) - had to smile and think of you this morning when i read that italy is in uproar when it comes to fake italian products in the uk due to brexit. and yes, mention was made of carbonara :D and, apparently, there was an uproar earlier this year concerning the nyt and a recipe:

    reading that made me realize i kind of forgot over the years that using pancetta which is all i can get around here is a sin to an italian. so my question - are you really able to get guanciale?

    Don't believe them, they said the same about mine. Turned it yesterday and today didn't wake up with any back or leg pain. Went from soft to firm mattress.
    The back of mine is not soft. It's hard. The way it's made doesn't allow for flipping. Another way to make money faster on mattresses.

    Mine is the same bought it two years ago. All I can say, I flipped it anyway and first time in months I woke-up without any pain. I feel twenty years younger. :wub:

    If you want to turn "carbonara snobbery" up to 11, then yes... guanciale only or don't even bother. There
    is a fantastic Italian market/deli within 1/4 mile of my Dad's apartment that carries it all the time.

    HOWEVER... pancetta is a completely acceptable substitute if guanciale is not readily available.

    ALSO HOWEVER... bacon is NOT acceptable whatsoever. Nope, uh-uh.

    Good to read about the backlash in the NYT. The passion lives.

    (PS: When you mentioned "Walmart" - eeuw gross skeevy skin-crawl to begin with - were you
    referring to the Bertolli version?)

    as mentioned, i had completely forgotten about the guanciale until i came across that brexit controversy this morning which led me to the nyt debacle :D
    and no, not bertolli - walmart at a showcase around the deli is offering prepared meals - spaghetti meatballs, a certain chicken dish, etc ;) which has some kind of cream sauce and bacon and is edible if you overlook the name. it'll do on the nights i can't convince myself to cook ;)
