and for that @SilverBear- had to smile and think of you this morning when i read that italy is in uproar when it comes to fake italian products in the uk due to brexit. and yes, mention was made of carbonara
and, apparently, there was an uproar earlier this year concerning the nyt and a recipe:

reading that made me realize i kind of forgot over the years that using pancetta which is all i can get around here is a sin to an italian. so my question - are you really able to get guanciale?

as mentioned, i had completely forgotten about the guanciale until i came across that brexit controversy this morning which led me to the nyt debacleIf you want to turn "carbonara snobbery" up to 11, then yes... guanciale only or don't even bother. There
is a fantastic Italian market/deli within 1/4 mile of my Dad's apartment that carries it all the time.
HOWEVER... pancetta is a completely acceptable substitute if guanciale is not readily available.
ALSO HOWEVER... bacon is NOT acceptable whatsoever. Nope, uh-uh.
