Was going to ask Tibs the best way to season it. I even saw one recipe with a sour cream & dill sauce made from pan drippings deglazed with chicken stock.
salt and pepper, flour, egg wash, breadcrumbs. Shallow fry in good light olive oil mixed with butter. Serve with a lemon wedge and pan sauce. Some people like to put a sunny side egg on top. That's it. IMHO.
