    Got my new toy yesterday - Jetson peddle assist e-bike.
    Bought a refurbish e-bike for half the price - not a scratch on it runs like new.

    It's UFC PPV tonight. Some killer fights.

    Having New York Style Pizza from my favorite New York Style Pizza Parlor.:D

    Haven't decided on the beer tonight. I have decided it's not going to be Dogfish Head 120IPA. It's 18% ABV. Pepper probably wouldn't make it to the end of the fights.:rolleyes:

    did y'all see that 8 people were crushed at a concert in Houston yesterday? Wow! How sad. If u have ever been in a crowd where you have lost control in which way you want to go, it's scary. It happened to me on Bourbon Street during Mardi Gras. It's freakin' crazy. No one got crushed or killed, but panic does set in a little.

    I read that this morning. I dislike crowds.

    The smoked hot sauce is done. It taste incredible, but I have to let is age for at least 2 weeks

    Peppers all cut up: chipotle, armageddon, scorpion, ghost, with garlic and onions (onions out of pic but they[re there. By the way that's Henckels cutlery from Japan:D--they make the best.
    p.s. forgot there's a Mariachi pepper there too. it's the top bright red next to the garlic.

    On the grill burner saute'ing. I could have done this inside with half the hot, hot peppers that I usually use. it wasn't near as dangerous.

    Pureed in the food processor. A little darker reddish color due to the chipotle peppers. Hot.. but more than manageable for most people. I can't wait for this to mature over the next 2 weeks. It has this beautiful smoky flavor. It'll go great on my eggs every morning.

    Is that a combination of vinegar and water?
    I assume there's salt in there too as a preservative?

    I saute the peppers and onions in some canola oil for aboutt 3 mins. Then add a cup of water and cook until almost all water evaporated. Cool and put in processor and blend a little. Then while on puree i pour 1 cup of vinegar and puree until, well, pureed. I usually taste (although that can be dangerous) and add about a teaspoon of kosher salt. Strain sauce to take out any fiber or seed and bottle.
